The menu tells you itself
Each page of Piedmont's menu prints a legend at the foot: a leaf for "vegan options available" and a second symbol for gluten free. Almost everything I have listed here carries that leaf. This is the clearest dietary labeling I have found on an El Paso menu, and it is worth saying what it does and does not mean: it is the restaurant saying a vegan version of the dish exists. It is not the restaurant saying the dish as printed is vegan, and the menu nowhere says what the vegan version swaps.
The vegan version is usually tofu or seitan
The pattern across the menu is consistent. Omelettes become tofu scrambles, and the menu notes that all tofu scrambles are made with organic, non-GMO tofu. Burgers and sandwiches take an Impossible patty or a house-made seitan cutlet. Bowls, noodles and fried rices take tofu, seitan or falafel in place of the meat, and the rices and noodles offer a tofu scramble instead of egg. So the substitution is real and built into the kitchen, not a favor you are asking for.
Sauces are where the questions are
What the leaf does not resolve is the dressings and sauces, and this menu has a lot of them: comeback sauce, yum yum sauce, green goddess, house aioli, chipotle cacao aioli, the tamarind chili sauce on the pad thai and the furikake on two dishes. Fish sauce in the pad thai, bonito in the furikake and fish or shrimp in the house kimchi are all normal in those preparations and none of them are addressed on the menu. Ask about the one on your plate.
This is not a vegetarian kitchen
Queso, crema and several cheeses run through the whole menu, and there is wagyu, pork belly, duck confit, salmon and ahi tuna on it. Shared fryers and shared grills are the obvious question and one I have not asked.
I have not recorded the hours
The listings disagree, one saying the kitchen opens at 10 and another at 11, and the restaurant's own site publishes no hours at all. Rather than pick one and be wrong, I have left them off until I can check. Call before making the trip.
