The tofu pho here is described with beef broth
The soup section lists a Veggie Tofu Rice Noodle Pho (202) whose description on this branch's menu says it is slowly simmered beef broth. It is not on the vegan or vegetarian list. The Cimarron and Montana Avenue branches instead list a separate soup (281) made with vegetable stock. If you want a meat-free bowl of noodle soup, those are the two branches for it.
Peanut sauce on the spring rolls
The veggie tofu spring roll is on the restaurant's vegan list and is served with peanut sauce. Vietnamese peanut sauces are sometimes built on fish sauce or hoisin. The restaurant lists the dish as vegan; I have not asked what goes into the sauce.
